Pull the knob from the OVEN - The temperature indicator - or selector
Anyway - pull the knob and look at the back - there is an adjustment there that you adjust so the front shows the correct temperature.

My viking is Model VDSB48-SS and the plate behind the temp know will move to the left or right and has no markings on it. I moved it and made no difference in the temp.

It doesn't change the temperature it changes the reading to match the numbers is all. There is no actual Heat adjustment. If this doesn't help let me know and I will contact the maker for you.

PLEASE check with the manufacture my temp is 30 degrees off not 50 as I stated earier.

    Hi again,
I called the manufacturer and even tho the oven is no longer available in that model I found them friendly and helpful.
The gracious person there said that 25 and 30 degrees out are part of the cycle of heat and not totally out of range. The need the Serial Number and would like you to call them - option into their tech service and they will carry you on through. Bonnie is who I spoke to.

Just for your information on the Viking you must remove all the knobs on the front and the backing rings on the knobs take the front panel loose and remove the temp control knob and under the temp control knob by the red wire there is an allan screw 5/64 you must turn it clockwise to increase the temp. this must be done very slow less than 1/4 turn until you reach your temp setting you need an accurate gauge in the oven.

Thanks for your help but it is a good thing I have good mechanical skills. Viking would not tell me how to set it because I am not a certified repairman. This is a major job and will take one to two hours.
    My oven works great.

Viking Thermostat bad - Feels like Little House on Prairie

It does not sound like the guy is trying to rip you off. Most mechanical thermostats are adjustable by a center screw in the oven control knob stem behind the knob. The problem is when an oven is off by more than 30 degrees they become almost impossible to calibrate correctly and it is better to replace it. There would not be any danger in just using the thermometers and just living with the problem. It would be a very expensive fix for a Viking and if you can live with it then you are better off. The parts alone will probably be over $300 and then there is the labor charges. The thermostat assembly also includes the tempature probes so it requires major range dis-assembly to replace it. Sometimes the oven control knob will have an adjustment screw on the knob istelf(back of knob) to adjust the position of the dial ring to match the correct oven tempature. This can allow you to change the position of the knob to match the actual tempature of the oven. They usually will only go 30 degrees one way or the other though. So my advice is that if you can live with it and are able to still cook properly then put off fixing it. If you find that over time the cooking tempatures start increasing then you might have no choice but to have the thermostat assembly replaced.

I have a frigidaire stove that heats to 50 degrees hotter than the know setting. Can it be adjusted to read correctly?

There is a calibration method to adjust the oven thermostat plus/minus 35 degrees if it is a digital display. The method varies depending on the model range. This calibration method is used to adjust the thermostat if it is not keeping proper tempature. For example if you are setting the oven to 350 and the actual temp it is keeping is 325 then you could use the calibration method to adjust it plus 25 degrees to correct the temp. Just so you know electric ovens will keep a pretty even temp but gas ovens will vary by 40 or more degrees to keep an "average" temp. For example the burner will come on when the oven is 330 degrees and turn off at 370. 330+370 then divide by 2=350. So a oven thermometer may not show you the temp you set it at in a gas oven but does not mean the oven temp is off.

With a small screw driver and a steady hand. Set the knob to the temp u want then pull knob off. Inside the stem there is a little screw. Try and regulate it slowly also allow it enough time to reach the desired temp. Good luck.

If you oven temp is off by +- 50 degrees, thermostat needed to be change. to check and adjust the oven thermostat usually we place the oven thermometer in the center of the oven, run the oven at 350 degrees for minimum 30 minutes and check the oven temperature, It should be +- 25 degrees, if it needed adjusting, there is the adjusting slot screw in the center of the thermostat stem, to adjusting it ( do not turn thermostat stem during adjusting ), turn adjusting screw counter clockwise to raise the the temp, clockwise to lower the temp, turn it a little at a time and wait 15-30 minutes before do the next adjustment until the temp match with the oven knob. To adjust the oven burner air and gas mixture, first turn the air shutter close, you will see yellow flame, then open the shutter until the yellow flame disappear and them open it a little more, now you are done. For the oven uneven cooking? you may have a bad oven burner tube, during operation some of the flame may be lift off, disappear or flame being uneven, you can check it with the kick panels off to see the flame, if these are the case, you needed to change the oven burner tube,

Viking Dual Fuel 6 Burner 48" OVEN DOES NOT HEAT

I hate self clean functions - If you think about it - you should too. These ranges are equipped with electronic components and running self clean at 950 degrees will more than likely burn something out. A lot of complaints are because of the self clean. It's not worth it to self clean than to clean it yourself. And 200 dollars is a great price for something like this if it includes parts and labor. Good luck.
