Question about Oster 5834 ExpressBake Bread Maker

What is causing the top of the loaf to cave in? too much or not enough yeast??? My model is the 5844, but both machines are doing it, so it seems to be a recipe or cook problem.

Suggest that you check the amount of yeast. If there is too much the top may sink.

Bread falls and collapses

Do you mean the loaf rises ok, then during the cooking cycle collapses?
if so, you will have to alter the mix.
First try using less yeast. Adding a little more salt may also help.

Machine turns on, goes through programme but end result is unrisen loaf and bottom of loaf overdone while top still quite white.

Could your yeast be stale? It gets stale very quickly once opened. i tend to use sachets to avoid this.
Could the yeast be coming into contct with the liquids too soon. Keep yeast away from fats and liquids. Put it in first for most Panasonic machines, then the flour which keeps it dry till machine starts to knead.
You also must use strong bread flour not all purpose. good luck

please tell me what kind of flour you are other words what does it say on the bag....does it say "all-purpose flour" or "bleached bread flour" etc..etc....let's start there.

I've had the Sunbeam Bread machine for 6 yrs. and have had great success with it, but lately I've had problems with the bread rising, and today the whole center of the bread was caved it when I took it...

You might try buying a few of those little packets of yeast. Then try the same recipe that you have been using. If the loaf falls again then your yeast isn't the problem. Recheck your recipe again and be sure you are measuring everything correctly. By the way in baking bread I always use flour marked "bread flour". I never use "all purpose flour" because of poor results in the beginning. I ebay machines all the time and have several in stock if you decide you need one let me know.

I just bought this and made my first loaf of bread, it didn't turn out, it did not bake evenly and the top was very uneven.

Since this is a 3 pound loaf and most others are 1 1/2 or 2 pounds, the recipes will need to be modified. I found that this machine has mostly negative reviews. Just doubling a 1 1/2 loaf recipe won't necessarily work, since it needs more time to rise. Try moist yeast, instead of dry yeast. It MIGHT help.

I am having the same problem, I have made 3 loaves of white, they all did not turn out, and I played with the recipe a bit to solve it, but I keep getting the same result!

Recipes Are wrong in instruction booklet

I had a similar problem when I switched machines. It seems that most recipes will work in same size machines (1 or 1.5 lb loaf size). My issue was that my old machine had to have liquids in first and then dry ingredients (new machine is the opposite). I ruined several loaves before I figured out the issue. I would have never imagined the order of ingredients would make a big difference.

Bread too high

The one thing that rises bread is yeast. You have some super duper yeast if the breadmaker suggests a certain amount and you keep getting the same results. You can either reduce the rise time -- or the amount of yeast -- or both.

The biggest thing is the yeast. If it's even a minute past due then throw it away. Freshest is bestest. Also watch your water temp. not to hot, or too cold. Warm enough to your touch.
And make sure your yeast is in your little well on top.
