Suggest you use plenty of oil in gas and live with what you consider a slower speed . OLD girls(motors) need TLC not full bore pounding

Why stalling out without choke ?

Possible vacuum leak allowing more air into the motor than needed thus the need for the choke to offset the unmetered air. Check for any disconnected/collapsed/broken hoses under the hood

Compression

The head on the motor you bought is bad; or the head gasket is leaking; or the rings in the 2 center pistons are bad. 30 lbs is far too low of a compression, and 5 lbs is garbage. They should be closer to 80 or 90 psi and not have more that 5% variance between the cylinders.
The first thing you will have to do is pull the head off and check it. Or you can take it back to the salvage yard you got it from, show them the results from the compression test and either get another motor, or have them refund your money.

How do i know when i need new piston rigs for my 07 crf100f

If you ran it out of oil, chances are you're gonna need more than just rings. Good chance you will be rebuilding or replacing the motor.

Sounds like you need a plumber. Check the water flow through the heat exchanger, you may find it only needs flushing through or the blades on the water pump are corroded away.

Apply power to the inducer motor, or check the voltage to it first.a relay or circuit board will control its operation, if the inducers not running, the pressure switch wont close and no operation .

It sounds like you need to change the fuel filter and change plugs and wires and check and possible change airfilterThe fuel filter would be my first thing to change.

Lack of power in gas pedal

Check fuel pressure and see if its around 30-35 psi while under load if not replace fuel pump, also the gas thats in the tank may be no good if it has sat for so long..

Sounds like crappy gas. The 289 may not like pump no-lead and the rattling sound you are hearing may be pinging / knocking.
