SOURCE: product key
When the trial is over it will ask you to purchase the regualr version. When you say okay, paid your money then microsoft will unlock the trial version into a full version and send you the full key. Far as I know there is no legal way to get around that.

If the Microsoft Office — 60-day trial desktop
icon is on your computer, you may have the Activation Assistant in the
Microsoft Office folder to request a trial activation key online. If
you can’t locate the Activation Assistant, request a trial activation key online.
this refers to a 60 day trial thats preinstalled onto a new computer, though i think the same shall work for your needs
hope this helps!

Anything is possible.....!
After the trial period expires The software goes into reduced functionality mode. Some of the limitations of reduced functionality mode include the following:
- You can not create any new files.
- You can view existing files, but you can not modify them.
- You can print files, but you can not save them.
How to Convert Microsoft Office 2007 to Full Version This requires that Microsoft Office 2007 has been installed without the product key in the first place.
Once Microsoft Office 2007 has been installed with no product key, proceed as follows:
1. In Windows Explorer, browse to the following folder:
C:Program FilesCommon FilesMicrosoft SharedOFFICE12Office Setup ControllerProof.en
2. Right click on Proof.XML file, select Open With in the right click menu.
3. In the Open With window, select Notepad to be used to open the XML file.
[Note: In Windows Vista, if you can’t see the Notepad option, simply double click the “Other Programs” to unhide it.]
4. Scroll down to the bottom of the Proof.XML to locate the following lines:
<feature Id="SetupXmlFiles" Cost="1248′><optionref Id=”AlwaysInstalled”/></feature>
5. Change the AlwaysInsalled to neverInstalled so that the line looks like following:
6. Save the Proof.xml file.
[In Windows Vista, you may need to take ownership and grant full access permission to yourself before able to modify the file. We already have a detailed article on that. Here is the link to How to take Ownership of a File in Windows Vista]
7. You can now launch Microsoft Office 2007 application such as Word, Excel, Powerpoint, Outlook and etc without prompting for activation.

It is, however generally possible to download Free 60 day Trial versions of some MS Office products.
Microsoft no longer offer and have withdrawn Free Downloads for MS Office 2007 Trial Products. All their efforts are now focused on marketing and support for MS Office 2010.
Microsoft often does this after a new product has been

will have to purchase a licensed copy of the software from a reputable,
reliable supplier, such as Amazon (www.amazon.com).
Online offers of Free Downloads of MS Office 2007
products are probably almost universally either not genuine, illegal,
unlicensed or pre-used licence versions, downloadable only from illicit download sites or are

(often unrelated) software, products or services.
Even if you do succeed in finding a genuine download site for
MS Office 2007 products AND manage to complete a successful, uncorrupted download, you will still have to purchase a separate, genuine,
unused Licence for the product before you can successfully install it, use it with confidence, register it, activate it and

Download MS Office Excel 2010 60 Day Trial or MS Office 2010 Pro 60 Day Trial (which includes Excel 2010 60 Day Trial ) and install it, carefully following each step.
If you do not want to buy or cannot afford a full, licensed copy of MS Office Excel 2010 or MS Office 2010 Pro, and/or prefer to pursue the downloading option, consider the latest version of a genuine, comparable free program -
Open Office - downloadable from:
You can use Open Office simultaneously with MS Office Excel 2010 60 Day Trial or MS Office Pro 2010 60 Day Trial.
If you delete MS Office Excel 2010 60 Day Trial or MS Office 2010 Pro 60 Day Trial, well before the 60 day expirty date, and Remove all components of it from Add or Remove Programs (or its equivalent in your Operating System) and restarting before downloading and installing, it is usually possible to enter into a further 60 Day trial period.
I hope this helps.
