Oven overheating goes to over 500 degrees. Ordered replacement thermostat and still goes ballistic. Is there a problem if the thermocouple wire touches the frame of the stove?

Most likely it's the thermostat. Not necessarily the controls but the thermocouple itself.
Here are 2 videos, the first one is about the opposite problem where the system won't cool. The "wire" sticking out of the thermostat he's removed is the thermocouple, sometimes you can replace that by itself.
The second covers a more sophisticated system and both possible failures.

You may need to replace the thermostat/thermocouple. This is a common part that needs replacement every few years (sometimes they just stop working sooner too). It's cheap and relatively easy to change. The purpose of this is to prevent a gas leak (because the oven is turned on) if the flame were to go out and could not be re-lit.

My oven temperature fluctuates widely (50 degrees) in both directions and won't hold a consistent temperature. I see from the manual that I can adjust the temperature up or down, but this won't address...

Try replacing just the thermocouple. You don't say how old the oven is, but the thermocouple is the device inside the oven that takes a beating (especially if it is a self clean model) and needs to be replaced every few years. A failing thermocouple allows wide temperature fluctuations.

Oven does not maintain a consistent temperature

Is this oven gas or electric? If it is gas then it can be normal to see 30 to 50 degrees difference in tempature. The tempature in a gas oven works on the average tempature. For example: The oven tempature may rise all the way up to 370 degrees. Then the burner will shut off. And then the tempature can drop all the way to 330 degrees. Then take 330 and add that to 370 then divide that number by two and the average tempature will be 350. If your oven is electric then the tempature should be much more consistant but can have a 10 to 15 degree variance. Also the standard oven tempature guage that you put in the oven or even the temp guage built into the oven are not very accurate. We us a Fluke meter with a thermocouple to calibrate an oven. So to check your oven for proper tempature regulation you will first need to let the oven pre-heat for about 15 minutes. Then place the thermocouple in the center of the oven. If the oven is electric the take a temp reading every 5 minutes and average them out. If the oven is gas then you will need to take a temp reading when the tempature reaches it's highest and lowest points. Take at least 5 consectutive readings and average them out. You should get an average within 10 degrees of set temp(350 degrees). If it is off by 35 degrees or less you can usually caluibrate the thermostat back to proper temp. This procedure can be different for each range model. If it is more than 35 degrees off or you are getting irratic readings then the thermostat or thermostat components might need to be replaced.

Oven is overheating by 110 degrees

used the info on the website to troubleshoot the issue. Determined it was the thermostat. Replaced it. Seems to work fine. Could not have done this without the illustrations showing where to find the thermostat and oven sensor. Great help.

if its off but heats fully i.e. 500 degrees then check for a defective thermocouple or oven temp control not an element

Try to set it at 500 degrees and see if it goes off at 350. If it does, then it probably needs calibrating. You can calibrate it by taking the knob off and finding a set screw in the stem where the knob sits. If this is not the problem, you may have to replace the thermostat. By the way, check to see if your temperature probe is not touching the wall of the oven. It will give it a false reading. Let me know if any of these things work and we will go from there.

How to lite the gas oven polit

When you turn the thermostat on the pilot light goes to secondary flame. The flame kicks on to the oven safety valve thermocouple. When it gets hot enough it generates millivolts and opens the safety valve. Here's how to check it; Make sure the flame kicks down and covers the bulb of the thermocouple. You can use a lighter if you're not sure. If no gas comes out It might be the valve that's bad. Now, some of the older models used a flame switch. It looks like a dryer thermostat with two wires on it and the thermocouple coming out of the middle. To check it, short the two wires together or use a ohm meter to see if it's closed.
