Email can be either fetched (via IMAP or POP) or pushed (Exchange). If you want instant notifications, you will have to setup your email account on the phone via an exchange server. As far as I know, Yahoo doesn't do this. For hotmail try the following:
Email Address: Your full email address
Username: Your full email address
Password: Your email password
Domain: leave blank

Solution to recieving pics...you can either use SMS or MMS...just click on the "envelop" key on your phone...should be top choice. Make sure you have a data plan through your service provider.
Solution to disconnect calls...Go into the settings for the phone and lock out your keypad while on a call...will stop the hang up..uless there is an internal probelm in which you would need a service tech to look at.
The name of your bluetooth headset is the OmniTech (OT-020C).
This will be slightly difficult to explain without knowing the model of phone... First off, you need to ensure that you are using a bluetooth enabled phone. You will need to enter the settings and tools menu. From within that menu, you need to find either "connections" or "bluetooth" and select. Make sure bluetooth is enabled. There will be an option to add a new device.
On your bluetooth headset, hold down the power button down until the power light stays lit. This may take 5 seconds or more. Now your bluetooth is in pairing mode.
Back to the phone, you want to hit "add new device". On certain models of phone you additionally have to select "search for devices". Your phone will recognize any headsets in pairing mode. When it is finished scanning, allow the phone to add your headset. It will ask you for the device pin code. This pin code will be 0000.
I hope this answered all of your concerns. If you are having trouble with finding the correct settings from within your phone, reply with your phone model and I can give you more detailed information!
