Scanned documents are image documents and they need to be converted using an OCR program. The Optical Character Recognition program converts scanned image documents into a text file which you can open with a Word program and edit.
You need OCR programs such as -
Tesseract OCR (freeware)
Microsoft Office Document Imaging (included in MicroSoft office Tools)

Text Cannot Be Edited After It Is Scanned to a Word Processing Program Issue
After scanning into a word-processing program, the text in the original is not editable.
process of changing text from an image to editable text is called
optical character recognition (OCR). Text should automatically be
converted in the OCR process when the Send To destination is a
word-processing program. If it does not, check the items in the
Select Editable Text
as the image type in Scan Settings
. In Windows XP, this setting is automatically selected if Scan Document
is selected in the Director program.
Scan at a resolution of at least 300 dots per inch (dpi) for correct OCR conversion. Check the default resolutions in the Scan Settings
on the Resolution
If portions of the scan are cut off, turn off the Auto Crop
feature in the Scan Settings on the Scanning
tab by clicking to clear the check mark.

them makes the OCR program read them as images. Readiris OCR, which is
included with the HP Officejet G and K series, can recognize these
images. Instead of selecting the word-processing program in the Send To
list, send the scan to Readiris. Use the Table Drawing tool on the
right side of the window to change the type of image to a table, and
then use the OCR. The text inside of the box should now be editable.
Handwritten messages might not be captured by the OCR process.

MS Word cannot open scanned documents to edit. You need to run a scanned document through an OCR program (optical character recognition program) which converts the scanned document into a text document. Then you open Ms Word and import or open this text document to edit or change the text.
if you scan a document it will be a photograph editing a document is done in a text application like word or notepad the two are completely different things i use text bridge or Paperport Professional it will read the text off of the scanner bed and convert to a text document it may make some errors but will still save much time rewriting the document add the saved text to word and change the font and spacing to try to duplicate the original document save it then edit it to your hearts desire
Put the CD in the computer
Select "Add more Software"
Check if you have any OCR option
If you have one Install it
Then Try to scan from HP Solution center and select Scan Document
You will be able to Scan to Editable text
Other wise you can purchase a Software RED I.R.I.S.
and then you can directly Scan from the software to editable text.

Take it into photoshop cs3.Type the text over the scanned text that u want to erase.resize the typed text to match the scanned one.
2)make a layer copy of the background layer.Turn off the original background layer.then, create a layer mask for the copied layer.and paint black over the area u want to erase, with the layer mask active.

The All-In-One Center appears with the Scanning & Copying tab expanded.Click Preview Now in the upper right corner of the All-In-One Center. An image of the scanned document appears in the preview section. Click and drag the box with the dotted lines to select a specific area of the preview image to scan.From the Select your text editor: drop-down menu, select a word-processing or text-editing program.Click Send Now.
Did you tried with any OCR software to convert the Scanned imaged (jpeg) to Word Documen?.Always if you scan anything to an image, it will scan in JPEG format that will consume lot of memory.Scan with OCR(Optical Character Recognition) Software and that will Convert JPEG to word Document which will fix the problem.
The OCR software that i Recommend is ABBY Fine Reader.
Is very hard to alter a scanned document if you are not sure how to, especially without the help of an editing software. but try to scan it to text if you have Word it sure will help, scan it to Word and after is saved you can type or erase certain portions of the document, browse trough the tools tab to search for the option that will suit better the type of work you want to do on your document. If you have Adobe Acrobat Professional this is very easy to do, you only have to scan the document on Adobe format and using the advanced editing tool.
