Its most likely to be the thermostat in the freezer packed up on you and the only real way to test this out is to fit a new one,

MTB1895AE Maytag fridge isn't cooling, freezer seems to be okay except for frost build up

The first thing you want to do is open the freezer and see if the fan inside there is running. The reason is the freezer cools the refrigerator side by circulating air from the freezer. If the fan is running then your problem is one or more parts of the defrost system is malfunctioned and in return your problem arises. There are three parts to the system, the defrost timer or in some cases control board, defrost thermostat also known as a bi-metal, and the defrost heater. The defrost system is set up to operate as so. The defrost timer or control board will turn the machine off, in some cases every 8 hours, some 12. During this time period the defrost heaters, located behind the freezer wall and rest underneath the evaporator, yet wires to them run up the side of it, are energized and emit heat that raises upward to melt the ice that has formed on the evaporator coils. The bi-metal or defrost thermostat is at the top of the evaporator. When the heat from the heater starts to reach the bi-metal, it breaks the circuit turning the heater off. The whole purpose of this is because the freezer cool the refridgerator side by drawing air across the coils and blowing to the other side via the evap fan motor. In my opinion, if you change one part of the defrost system change them all because usually when one part fails another will follow, so save yourself the time and the food loss, the cost difference is minute.

My freezer is building ice and building in the freezer and behind the panel where the fan is. then it will not freeze. sometimes 3 days to make 1 ice tray. The refrigerator is not cooling and there is...

sound like you have a defrost problem. The evaporator is behind the panel where the fan is. YOu will need to remove the panel, and test some of the defrosting components. Behind that panel are the heater and bi-metal. ( Bi-metal is also called defrost terminator ) the bi-metal looks like a little cylinder ( about the size of a stack of 8 quarters ) it should be attached to the freezing coils. With the refrigerator unplugged, make sure you have continuity through the bi-metal. This may involve cutting the wires to check, so leave enough wire to be able to splice back together if the bi-metal is good. ( The bi-metal must be ice cold before it will have continuity through it, as the heater heats up the coils it warms the bi-metal enough to loose continuity, therefore shutting the heater off ). Now with the bi-metal cold and no continuity through it, replace the bi-metal. If there is continuity, then check the heating element for continuity at both ends of its wires. If yu can check the ohm load on the heater it should read somewhere around 28ohms. If all these parts are good then it would have to be the defrost timer. If you had the model # I could go into further details on how to check the timer. Hope this helps

I have a whirlpool refrig/freezer with ice maker. The freezer keeps freezing over...do you know why this is happening

If its freezing over on the back wall and the fan in the freezer is running then you have a defrost problem. The defrost system consist of the the defrost heaters, bi-metal thermostat and defrost timer. Nine times out of ten the defrost heaters wont go bad so focus on the timer orthe bi-metal. In my opinion its best just to change them both and get it out of the way. With that said, if the fan isn't running that will cause your freezer to frost up as well.

Freezer side not freezing

It appears that the defrost bi metal control is hanging up and during the defrost the temp in the freezer is going too high. It is supposed to terminate the defrost at around 50 degrees. This usually occurs in about 20 minutes, if the defrost heater stays on for too long the freezer temp goes too high. Change the defrost bi metal
