If the games you are playing are only compatible with single player gaming, only the player one remote will work.

We can only figure out how to play with two human players. Are we missing something or is it because we only have two Wii remotes? We'd like for 4 to play.

You can only play as many players as how many remotes you have. So if you only have 2 remotes you can only play 2 players. If you have 3 remotes then you can play 3 players ETC.

It only lets me have 2 players at the beginning of wii play. It already has all 3 wii remotes connected to our wii, but for some reason the "MORE" button isn't an option when I first get into wii play

If you haven't noticed, Wii play is only a two player game, only two wii remotes can be connected. There is no reason to have more that 2 remotes connected.

Can't play with 2 players

Make sure you have paired both remotes to your Wii console.
Open the little door on the front of the Wii (under the disc slot), and open the battery cover of the Wii remote (but leave the batteries in).

Push the red button on the Wii (next to the SD card slot), then push the red button on the Wii remote (next to the batteries). You should see the Wii remote's lights blink.

Do the same for your other Wii remote.

Now on the bottom row of 4 lights on the Wii remote, one should have the first light lit, and the other should have the second light lit. You should also be able to see a cursor for each remote on the Wii Menu.
