Question about Toastmaster 1142 Bread Maker

Open Question

I have a Toastmaster Bread Box Model 1163. I just made a batch of dough using the Dough cycle. I measured the ingredients exactly and when the dough finished the cycle, it was extremely sticky. I had to add additional flour to the dough before baking (between 1/2 and 1 cup). Any ideas what went wrong?

Hi ravimalini,

Something is stopping the yeast from acting (fermentation creates to CO2 bubbles that cause the bread to rise). Was the new yeast you used all from the same batch? (sometimes they have bad days at the yeast factory, too). Can you watch when it runs through the cycle, and check for conditions _before_ the dough is supposed to rise? If it heats up much too quickly/soon, the heat can kill the yeast before it get to do it's job.

Hi,
Air temperature in your kitchen, humidity and barometric pressure can effect bread dough. Best thing is to watch it mix and add either water or flour so that the dough forms a nice soft ball and is separated from the side of the pan while mixing.

Bread pan Capacities


Here is how you determine the size of loaf you can bake in your machine. You need to determine the capacity of your pan. Fill your pan with water and measure the cups added so you know how many cups of water are in the pan when it is full to the very top. Here are the conversions:


1)If your pan holds less than 10 cups of water you can make: a 1 pound loaf


2)If your pan holds 10 cups of water you can make: a 1 pound loaf and a 1.5 pound loaf


3)If your pan holds 12 cups you can make: a 1 pound, 1.5 pound, and a 2.0 pound loaf

This is rare, but if you pan holds 14 cups or more you can make all the above plus a 2.5 pound loaf

Is there anything I can do?


I don't know about your specific model, but in most bread makers there is a removable paddle that goes in the bottom of the bread pan after you put that in the machine. The paddle usually has a flattened side on the hole which slides on to the post sticking up from the bottom of the machine. If you look at the post straight down from above it should be D shaped. The usual procedure is to put the pan in the machine, install the paddle, and then add your ingredients. Assuming you are doing this and it is still not working, trying running it through a mix only cycle (like for pizza dough) with the machine empty to see if the paddle is engaging and spinning properly. If it is not, contact the manufacturer for assistance.

If you pushed the button for "French" bread then you do have a problem. If you pushed the "Dough" buttton then the flashing0:00 just means your dough is ready.

using the dough cycle very little if any heat is required. Your oven will not get very hot.

In west bend do you have to use the dough cycle first


Dough cycle is for just mixing and kneading the dough. Like if you want to make pizza or buns. It will only mix the ingredients, cycle for a while to knead, then it's finished. It won't bake form there. Any other cycle will make the bread.

Machine is churning but not thed dough


You are using too much water.. Dough is too wet. Mixer blade is just drilling hole in dough instead of moving it around to mix.

Be sure to measure exactly to recipe. This is science not art.

All ingredients are measured exactly as specified. During the rise cycle the dough is practically overflowing. When it starts baking the dough drops with the largest amount in the center of the loaf.


The next time you bake bread use one tablespoon LESS liquid. If it stills falls then the 2nd time use one Tablespoon less liquid AND ONE TABLESPOON MORE FLOUR. That should do it. Please let me know how it works for you.

I have a toastmaster Bread Box bread machine...I am making French bread...the banging noise was so loud I stopped it fearing the machine was broken...is it ? If not should I continue the kneading/baking...


Unless the sound is mechanical like metal on metal etc. what you may be hearing is the sound of the dough ball being knocked around and kneaded. Sometimes that gets pretty loud. While it is kneading go ahead and open the top and see if you think the dough ball is making the noise. If it seems to be coming from somwhere else then you may have a more serious problem. Is this a new noise or it this the first time you have used the machine?

Need to make gluten-free bread


bobs redmill gluten free mix for bread machines. we just use the standard bake setting but select B for doneness level. found it gets a little too dark on A.
