When the whole unit shuts down including the pilot light the thermocouple is not working properly. The thermocouple is what tells the gas safety valve that the pilot light is lighted. When the thermocouple fails and does not send the milli-volt (mv) signal to the gas safety valve due a failure the gas safety valve turns off the gas supply. (i.e total shut down)
If you have a handyman around you can have him disconnect the thermocouple from the gas valve control and clean the mating area in the gas valve and on the bitter end of the thermocouple. After cleaning then reconnect the thermocouple. This sometimes corrects the problem. FYI you can get a thermocouple at most any large appliance parts supply. (You will need to the know total length) It would be even better to have the old one in hand during the trip to the parts store.

You mentioned: when heated up goes off totaly ,include pilot

The solution I provided will most likely correct your gas fryer problem IF it is the thermocouple type unit.

However.... if the pilot is electronic on your gas fryer (i.e a glow bar type ignition), then the signal that on the older type gas units that was controlled by the thermocouple is controlled by "The flame sensor." If the "Flame Sensor" fails, the signal to the gas safety valve is lost and the unit will stop operating because the gas safety valve will shut off the gas supply. It is also possible to have a poor connection on the glow bar or a defective glow bar that fails when it s hot. Either way that too can result in non-operation.

A weak gas valve solenoid (one of 2 ea) can also cause total shut down.

You mentioned the Tech replaced a thermostat. Cooking control thermostat or High Limit thermostat? The high limit Thermostat OEM PN 1177 will also shut off all gas supply.

    http://www.3wire.com/webstore/Parts/Part...

It is going to take a meter to find out where in the circuit the open has occurred.

Source power to temp control and gas safety valve
    Gas safety valve solenoid control
    Thermopile control
Proper function of the Thermocouple in mv
    High limit thermostat function.
    temp control to ground

I am still sticking to most probable suspects as the High Limit Thermostat #1 or the thermocouple #2.

The high limit is a safety device on all fryers. For your fryer it is mounted on the right side inside the door. Push in on the red stem sticking out of the front of it. If it is tripped you will hear a click when you push it and then the pilot will probably stay lit. If it is a case of the high limit tripped....then you need to check your thermostatimperial cif 40 single tank bouble basket deep gas - 2_bing.gif and make sure that it cycles the main burners off at the set temperature.

Hi, from the above question, the problem is not with ht thermostat but with the control board. The control board fails to hold onto power when the device is heated up, that why it goes off automatically..

Take care

Sounds like the high limit switch is bad, and causing the unit to think its overheating. Have that checked, i bet thats your problem.

Hi

Yes it is a problem with the thermostat. The reset button is probably in a high limit. The high limit is a safety device to turn the fryer off if the oil gets too hot. Normally they will "trip" somewhere between 375 - 450 degrees F for commercial fryers. I would suggest placing a temperature probe in the oil and see what the oil temp is when it trips. If it trips at a temp below 375, it is a bad high limit. If the thermostat is set at 350 and the temp goes over 400 then the thermostat is bad.

Let us know if you want to know something more else please accept the suggestion.

Flame not going into heat tubes

Make sure the regulator assembly on the gas valve is for propane. Sounds like the gas pressure is too low and the flames aren't going into the burner tubes. Make sure they didn't install an appliance regulator on the back of the fryer. This is not needed as the fryer has a regulator on the gas valve. You can unscrew the cap on the regulator assembly and turn the plastic screw inside all the way in. DO not turn with alot of force. Easy does it.

Fryer will not fire

The coil in the valve is barely being held closed. Most of the time, 90%+, the thermocoupler (or thermopile) is bad.

You can clean and check the connections, and test it again. Otherwise, spend $20, and replace the thermocoupler. (thermopiles $50) Reason is, a gas valve will likely cost $250 or more. Good luck - Mike
