Question about La Pavoni Europiccola EPC-8 Espresso Machine
I have a la pavoni pump espresso machine and cannot seem to find the right way to achieve quality, & substantial, crema. I use a good grind (from starbucks grinders, sorry). I left the lever, wait for the espresso to come out into the cup below and then begin pushing down hard on the lever. I do that one more time as I use the double portafilter cup.
That said, I still only get a very thin layer of crema, which goes away within a few seconds.
I have tried a more fine grind, I have tried a more coarse grind (Ive been suggested both) & still no good. I do not let the machine get to hot and the coffee grinds are at rooom temperature. But still no luck and I am completely perplexed by all of this. I feel like paying someone to come to my home and 'show' me how it is done.
Any suggesstions would be very greatly appreciated.
If you have tried different coffees and grinds then i would try different packing methods using a tamper to do so. Try packing very firmly to not so firmly and see if that works. Also you might find that you need a new double filter basket. I have seen this in quite a few machines where the holes in the basket can become very slighty enlarged from what they were originally and what this does is allows the coffee to flow through the basket too quickly and therefore leaving you with poor crema by not getting a good extract from the coffee. Generally to get perfect shots of espresso you want to have proper conditions like brewing temperature and grind.
if you don't have a grinder at home to grind right before you brew then you will never achieve perfect shots. not to mention that grinder has to be of good quality or inconsistent grounds will spoil your shots.
Also starbucks coffee is terrible, try to find a local roaster so you can verify bean roast dates.
