The problem you describe usually happens when a process gets "hanged" while opening a MS Office application.
Open the Task Manager and see if there's any process consuming a suspicious amount of CPU usage while opening the Excel document.

BTW, is it a shared document (i.e. handled by different users over a network)??

I use excel from office pro upward.
I do notice a little longer to open on the newer versions compare to office pro.
There are a lot of factors involved that could cause delays.
First off MACROS. These can cause delays if you have any set up no matter what the version as there are security aspects involved.
IF you do have macros but don't use them or pass the sheets to people that don't use them then remove those.
A large factor with big sheets is the computer specification that is running office. This is one of the more noticeable aspects. A slow computer with limited ram can be very slow.
More so if there are too many other processes / programs running.
Quite often I can speed such computers up by performing a very thorough clean up before continuing to use office
Additionally there can be delays when using sheets between version of office as office 2007 tends to save with features not all versions of office support.
The general fix for that is to ensure that the office compatibility pack is installed on ALL computers and where possible save the sheets on the lowest version of office you have.
Another important issue is to ensure that the computers you use are virus AND malware free.
This can be quite important especially if you DO use macros !
LAST but not least it is not uncommon for an office installation to become corrupt either by accident or incorrect shut down etc.
In those instances a "repair" installation will quite often fix things.
If a file is corrupt and is used on anther computer it is possible for it to carry those settings to the next computer. This can happen more with word documents where a layout profile may be carried over.
I know there appears to be a lot to look at here and there are a few more odd issues that could also give you the problems you see but these are the most common ones
