Refrigerator freezing food
Fridge thermostat dials are often problematical due to the ones that are numbered 1 to 10, is 1 the warmest or the coldest as the number is lower? Some companies put 'warmer' and 'colder' which avoids confusion. My advice, put it in the middle '5', and leave overnight, check the temperature in the morning with a fridge thermometer. Then change the thermostat dial to 8, and check it the next morning with a thermometer. The next day put it on 1, and leave overnight, check the temperature in the morning. If the thermostat has gone, all three morning temperatures will be the same.

The things you did, cleaning the coils, will actually make the fridge run colder. The Defrost Thermostat is unlikely to be the problem, as when they don't work, the evaporator, the part that is where the chilled air comes from turns into a block of ice. When that happens, air can't pass through it and the fridge warms considerably.
Due to the damage this freezing is causing with your water and filter, I would suggest you call a service engineer and get it fixed professionally as you will be swapping out parts that are fine.
