I can get to the menu where I set the date and time but on the rec. menu I cannot highlight the date time icon where it looks like it can be turned on or off to embed the date on the photos. I would appreciate your help. Thanks

Make sure you have set the date and time correctly on your camera.
View the picture you want to Time stamp, by changing left hand slider to green icon.
Press the circular 'Menu/Set' button
Press down arrow to get to playback mode in the onscreen menu.
Press right arrow to access this menu.
Press down arrow until 'text stamp' is highlighted.
Press right arrow to select.
Choose whether to apply stamp to single or multiple photos
Press 'Menu/set' to select photo to stamp.
Choose which stamps to add. Date, time, age etc..
Press 'Menu/set' again and select the 'Yes' box.
The only problem with this is that it will re-size your photos to about 3m, which can make them grainier if you took them at a higher resolution. Unfortunately there is no other way to time stamp your photos on this camera.
To set the date and time stamp on pictures, Follow the given instructions: Setting Date and Time:
First of all set the exact and time if your camera:
Press the "Menu" button on the camera and use the right navigation button to choose the "Set Up" menu.
Scroll down to "Date/Time" and press the ""Func./Set" button. The set
date and time will appear on the screen, and the month unit will flash.
Adjust the month unit by pressing the up or down navigation buttons.
Move to the day unit by pressing the right navigation button. Use the
same instructions to adjust each unit of the date and time.Push the "Func./Set" button to save the time and date settings.
Setting Date Stamp on pictures:
Press the "Func./Set" button and select "Recording Pixels" and "Postcard". The camera is now set to "Postcard" mode.
Open the "Rec." menu by pressing the "Menu" button on the back of the camera.
Highlight "Date Stamp" by pressing the down navigation button.
Change the "Date Stamp" setting by pressing the right or left navigation
button. Your choices are "Off", "Date" or "Date/Time". Now, when you

The date stamp will only work when the camera's resolution is set to postcard mode. Press Func/set, scroll down to the bottom, then across to the icon with the clock and mountain. It will say "postcard". Press Func/set again. Then press Menu, scroll down to "Date stamp" and across to select date or date and time, then press menu again
To set date stamp follow the instruction:-
1) Press MENU button.
2) Select REC Menu.
3) Use the up and down buttons to Select Date Stamp.
4) Toggle to the desired opetion OFF or ON.
Note:- Ensure the date & time is set before using date stamp function.
You need to do two things:
1. Go to the Rec menu (press Menu button and go to Rec), then scroll down to 'Date Stamp'. Select either Date or Date/Time, depending on what you want to be displayed. Press Func/Set, then press the Menu button to exit.
2. Set the recording size (L, M1, M2, S, Postcard) to Postcard. Press the Func button, scroll down to the size icon at the bottom, then scroll over to Postcard. Press the Func/Set button to save and exit.
