1. CompatibilityThe PS3 supports only one headset at a time. Multiple players on the same console will have to share.
Bluetooth:
USB:
USB (wired) Headsets can also be used with the PS3.
Not Compatible with Bluetooth Stereo Headphones:
2. Setup
A Bluetooth headset has to be registered, or "paired", with your PS3 before it can be used.
If
you're using a USB (wired) headset, just plug it into one of the ports
on the front of the PS3 (the system should auto-detect the USB headset).
Mic Test and Volume Setting
After
pairing a Bluetooth headset, or after plugging in a USB (wired)
headset, return to the XMB. Go to "Accessory Settings" and choose
"Audio Device Settings". You can test your headset here.
You can also view a list of Bluetooth accessories you have registered in the "Manage Bluetooth Devices" tab under "Settings".
If your mic doesn't appear there then try pairing it again.
There are more ways to configure the audio input and output that can be useful:

SOURCE: headset wont pair with new ps3
is this bluetooth
if it is blue tooth you have to hold blue tooth power on while the pairing mode is searching for headset
if its a cabled headset threw usb you gotta put in your disk for say example= logitech since these are common
the playstation has memmory card that stores the settings but requires you at least set up usb head set parameters either to ps3 or your memmory cards properties
your headset is fine you just require a new hardware setting with the disk that came with your head set
SOURCE: how do you turn the bluetooth on on a ps3 cause i
Turn on your Playstation 3, and from the main menu go to Settings - Accessory Settings - Register Bluetooth Device
You will be presented with two options:
Register BD Remote Control
Register Headset/Microphone/Headphones
Select Register Headset... and put your Bluetooth headset into pairing mode. On your PS3 select Start Scanning
Select your device and enter your pairing code. In most cases for audio devices the default pairing code is "0000"
Now on your PS3, go to Audio Device Settings and change your "Input Device" and "Output Device" to your Bluetooth headset name. Try speaking and watch your "Mic Level" move!
This might help you as well:)
