Items are freezing in the fridge area. I have the temp. set at 1 - is this the lowest setting? Also not sure where I should be setting the vegetable tray area, low humidity or high humidity?

Usually the thermostat stuck closed but can sometimes be drain water freezing after defrost due to blocked drain. Fully defrost and check water drains away.

Most times this is a bad cold control, but there are other things to check for. Make sure the condenser fan is working and the coils are not covered with dust. A separated heat exchanger ( small capillary tubing soldered to the large suction line ) can separate from one another and make the fridge run too long. - tape tubing back together. A poor working evaporator fan motor could also make the fridge run too long and freeze - replace the fan motor. An inefficient compressor or refrigeration system could make the fridge run too long and freeze - have a service tech check this out. A misaligned control settings, make sure the air damper and cold control have not been bumped and are out of normal settings. Stuck open air diffusers or air dampers are becoming more and more common for allowing too much air to be blown into the fresh food section and freezing things. On all frost free fridge's the freezer temp air is blown into the fresh food section, if you have "easy" to freeze items ( eggs, veggies in water, etc ) in front of or under where the freezer temp air comes out, they could freeze - store them in a different spot. Doors not closing properly making the fridge run too long is something else to check for.the air deflector....
As you know, the deflector directs the freezer air toward the front of the frig and the rear of the cold control

THIS REF. WORKS BEST WITH THE REF. SET ON 4 OR 5 AND THE FREEZER AT 2 1/2 OR 3. HAVING A HIGH FREEZER TEMPATURE CAN HAVE FREEZING IN THE BOTTOM DRAWER OF TH REF. MAINLY BECAUSE OF THE RETURN AIR VENT TO THE FREZER IS BEHIND THAT DRAWER.
Those are notorious for that because the icemaker is in the refridge compaertment which is freezing inside of it. Try to adjust your temp settings so the items will not freeze. Sometimes you will have to set your temp setting around 45 or so. Another good idea is to put a thermometer in the fridge so you know exactly wht is going on in there.
try turning down the thermostat for the freezer side some times the controls seem backward. However most fridges are desighned for thwe freezer side with some thought giving to pushing some air to the refrige side. in most cases it easier to start back at medium settingsfor two or three days.
sometimes when the cooler weather comes in you may need to chnge temp setings to a warmer setting to prevent some items from freezing ie: leafy vegetables, water bottles, eggs, etc etc.
now if you are having total freeze up of everything in the ref section then you could have bad temp control or damper assy.
