Check firs to see if your coils need to be vacuumed. If this does not work you may have a bad defrost timer ( causes the freezer to stay in defrost longer than it needs to be and the food will not freeze) You can change this yourself if you are handy and can locate it on the fridge.

The first thing to do is, give it a FULL DEFROST, the old fashioned way. set it for defrost or unplug it and melt all of the ice out of the air tunnels below and behind the freezer. In the refrigerator section, you will find a hole that you can stick your finger into, normally in the wall next to the freezer. This has the defrost timer in it. Give it a full turn CLOCKWISE to make sure the contacts aren't stuck. When you are sure all the ice is melted and the water has been dried up, power it back up. It will run properly if nothing actually went bad. The next step, if it doesn't work right, is to replace the thermostat.
If you have ice build up on the evaporator (located in the freezer) unplug fridge and melt ice using a heat gun or hair dryer to speed up the process. Taking the back cover will also help. (If you don't feel comfortable doing it, don't do it.)
And don't worry, it is very common to change temp. settings when cleaning fridge. Check settings and restart unit.
Had a problem similar to this with this frig and the problem was a bad mother board that kept the fans from operating correctly to disperse the temperature. I woould actually get stalagtites forming from the warmer top shelves to the colder lower shelves. Repaire under extended warantee.

If it is not freezing, I would suspect you didnt use enough salt. Salt melts the ice and makes the water colder. You need lots of ice, the finer crushed the better, and salt. Do not bleed off the cold water, that is where the action is.
What is happening is that ice cream has a lower freezing point that water. Perhaps 5-10 degrees for ice cream. Now, the problem with the freezer is 1 of 3 things. 1. Make sure the air vent coming into the freezer is not blocked. 2. Check the thermostat setting and make sure it is on the coldest setting. You can always bring it back up when you get it colder. The thermostat may be going bad. 3. The freezer may be going bad (compressor or other componnets). If it is older than 12-15 years, then you may be better served getting a new one. This may mark the beginning of the end. Check these and let me know how you do.
with very littlle ice cream I would set freezer temperature to -2 degrees and leave the humidity seting where you have it remember to let the unit run for 24 hours to stabilize then you can make another adjustment. By the way you are not being a pest I don't mind helping you at all, I am a service manager and answer quesitons allo day long.
I would expect the defrost timer to stay in defrost 21 minutes. IT seems your timer is normal.
If turning the ref section temp colder made compressor come on, it could be that the thermostat is worn a little and just needs to stay on a little cooler setting. Check the freezer temp dial and It should be at just slightly more than 1/2 of available setting. If there is A B C you would want to be a little cooler than B about B and 1/4.
