If you've had this happen with two systems in a row, then it may not be the systems. First, try hooking up the PS3 directly to the TV, or another TV, and see if the issue still occurs. If it does, then something between the PS3 and the TV is causing your issue. Otherwise, call and get it replaced again, and hope the issue doesn't happen again.
Does the PS3 work again afterwards? Do you still have control of the PS3 when the movie freezes; can you fast-forward/skip past the point it stopped. If the movie freezes at the exact same point again, then it is a defect with the DVD, or is dirty/scratched.
if the PS3 is still working at all.. REPLACE THE FAN NOW! It should be quite simple. while one PS3's CPU may be able to handle overheating a thousand times and never break, another PS3 may overheat once and permanently destroy or weaken the CPU!
If the fan is just dirty, you should be able to open it, rebuild the fan by removing the (probably) sticker on one side and using a pin to pop off a retaining washer.. then you can push the fan blade off and clean the bearings and everything with isopropyl alcohol. put JUST one or two tiny drops of oil on the bearings/shaft and reassemble. There may just be a hair inside. Often, fans have rubber o-rings inside -you SHOULD remove these as they will ALWAYS eventually stop the fan from working again if they've failed once before already.
If the fan is actually dead (quite rare) then you can purchase one online. Get an exact replacement, or one with the same measurements and either the same, or better, specifications (will be written on the fan, and can be searched online -important that the new fan moves as much CFM cubic-feet-per-minute of air)

and how old some older models the fan makes a lot of noise in the need to replace the fan is your bluray drive working properly? if is then inside the ps3 there is no moving parts other than the fan and the bluraydrive if you need to replace your fan I have replacement parts for the ps3
Make sure the system is off. Hold down the Power Button for 5-6 seconds until you hear the second beep. Your video settings should now be reset and you will be able to choose your connection type. It will automatically default to AV so make sure you at least have that plugged in.
