If the main burners ignite with the thermostat off, you could have a bad t-stat or a bad gas valve. If the gas valve is a combination safety, (all built into one), check your wiring connections.

If I have the symptom right, you should call a professional.

Where can i get a manual for the built in filtering system for a 11 year old fryer

you can go to the maker of your frier web site and down load a manual from them they also have a parts book with all the part number printing by the part in a exploaded view so it's easy to tell what part you need. By the way the model number is usally found on the inside of the swing door of the frier on a printed badge or stamped on a plate in the same place.

Will not heat to temperture

have you tried to simply pull the frier out and make sure the main gas valve hasn't gotten turned partly closed causing the gas to be restricted to flow also some times the flex hose that hooks up the unit to the mian wall line gets pinched closed and will cause the same problem the unit will light up and act right all except for coming up to the rt. temp. we had this problem at the place i work at happen to our friers, may not be your problem but it don't cost nothing to try these two things and see plus save you on a repair call..good luck with it and hope this helps.

Deep Frier power indicator light is on but will

Most fryers have what is called a hi limit. When the oil temp reaches a certain Max temp this switch opens the circuit and will not allow the unit to heat. On commercial fryers, the hi limit has a really small red plunger button. Push it in to reset.

Friar heats up to correct temp but doesn't maintain

The first thing I would check is the hi limit. If that not out then I would try to a temp. gauge that will read above 350 degrees.maybe the thermostats is not right. Reading to low for the temp.
