Any printing lab that knows their maching can print the date on digital images by request. If they can't or won't accomodate this simple request, find another lab. In particular, the Fuji Frontier labs have this function readily available to the operator. They shouldn't charge you anything extra to do it, either, as it's only the press of 1 button.

We'd like the date stamp to show up again but cannot highlight that option. We've already set the time

You didn't specify the model, so it's only a guess as to what you may need to do. The most common resolution is to check to see what size you have selected (L, M1, M2, S, postcard). For compact Canon cameras that came out two to three years ago, the size had to be set to 'postcard' in order to get the date stamp imprinted on the picture.

The date stamp only works in "Postcard" resolution. Press the "Func Set" button, then scroll down to the bottom to select postcard resolution.

Then press the menu button. Select the "Camera" menu, then scroll down to the the Date Time Stamp selection to turn it on.
