Pitco sg14 Why does the temperture dial not go over 350. the knob says 400 but cannot go there??

On certain models the thermostat at the factory is set at 375 and even though it reads 400 the factory says the unit cannot exceed 400 degrees.If you wanted to go higher you can remove the knob,you will see the stem and inside you will see a little screw.If you hold the stem and turn the screw counterclockwise this will increase the temp.If you turn clockwise it decreases the temp.1/8th turn of the screw equals 30 degrees.If you do this be very careful because if you set it too high the high limit will trip (saftey device) and then youll have a bigger problem.

Fryer smokes at 350 with new shorting and we fryed chicken at 350 and it got to done on the outside and raw on inside also the thermostat is not screwed down to the holder whats going


Hi there.
You may need to check the calibration of your fryer in to verify if the thermostat regulates the oil temperature as set on its dial. As for the thermostat body, it should be mounted properly to avoid movement that which could break the capillary.

I have a pitco deep fryer sg16. the problem is the pilot turn but when i try to turn the knob to turn it up, it's not starting and i hear a 'click' and then the pilot turn off . please help...


I think that the gas valve is defective and needs replacement. Visit http://www.middleby.com and go to PITCO web, you will be able to locate there the nearest authorized parts and service dealer in case you need parts and service.

Pilot is off.


Most fryers have pilot lighting instructions on the inside of the door. If yours doesn't then find the gas valve, turn the knob to the pilot position, push in on the knob and light the pilot. Keep the knob pushed in after you lite the pilot for at least another 30 seconds. The pilot should stay lit.

Solid state thermostat won't calibrate.


I believe at 350 the probe should read 942 ohms with a variation of 2%. Hope this helps.

Not turning on


Sounds like you have a bad t-stat. You could take a reading through it when you turn the temp up to see if it is operating.
