SOURCE: Globe commercial Meat slicer

Hi, I have working on meat slicer my whole life and can help you.

What normally happens is this. The bearings in the knife hub (this is the unit that the knife attaches to and spins) is starting to fail.

The gear on the knife hub is made out of a fiberous material and the worm gear on the motor is made out of metal, so when the bearings start to fail and cause resitance in the hub, the metal motor gear starts to eat the fiber gear on the hub and eventually wears a big chuck out of it. Then the motor spins free and doesn't make contact with the hub gear.

How you can check if this is the problem is this. You need to keep the power switch on machine in the off position and turn the blade a 1/4 of a revolution. Then turn the machine on, what should happen is that the blade will spin some and stop again.

The proper fix for the machine would be to rebuilt the knife bearing unit and replace the hub gear, motor gear and hardware.

In regards to the Chefmate. This is a design flaw of Globe and I told them about this when the machine first came out! The know is on a steel shaft that goes thru the aluminum body. The steel shaft starts to corode and also rust, then it freeze in the frame. What has to be done is this. This assembly needs to taken about sanded, lubed and put back together. The best way to permently fix this is have a machine shop machine the frame out and install a Oilite Bushing, these are impregnated with oil and it will never lock up again.

I have a very old Globe slicer. Black oil or grease is appearing across the front plate as I slice.

it is most likely an oil seal on the shaft behind the slicer blade
if it is then you will have to pull the seal and take it to a bearing and seal shop and have it matched up
remember that any lubrication used has to be in conformance with food production standards ( not car oil or grease)

I am looking for a part to my chefmate slicer model #GC510. Is there antwhere that just sells parts?

Globe Food Equipment has a website that gives a parts catalog and a pricelist for the slicers: www.globeslicers.com The parts catalog for your slicer is at : http://www.globeslicers.com/Editor/assets/globe_docs/gc510%20catalog%204.15.8.pdf

If you get your part number from there, you can price compare at some other parts houses (such as onesharpstore.com ) by running it through google.

Hope this helps

My chefmate breadmaker - The liquid and flour don't get mixed..

Hi,
Even though you hear the paddle moving, the belt may be slipping so the paddle does not rotate at full force. Please check the tension of the belt. You can access the motor, belt, pulley assembly inside the base of the machine. Also, please check to make sure the kneading cycle is run fully. Check the manual to see length of cycle. Good Luck...Hank

Make sure the outlet is working. Maybe try an extension cord. Is it shut off inside? Does the light come on?

Globe Meat Slicer Model # 500 motor runs blade not turning

Fiber gear on blade hub stripped. deep socket required to remove hub. DON'T CUT YOURSELF!! remove motor, used food safe solvent to clean grease out of housing. Fiber gear held on with snap ring. Replace gear, repack housing, put hub and motor back and start slicing. Routinely check to make sure gear is lubed.
