Dense, heavy loaves

I have made three loaves on my new Zojirushi bread machine, and all three came out more dense than I would like. I have followed the directions perfectly, but I'd like to have lighter loaves—the kind I'm used to. Nanearl

    I've used the "Supreme" 3 x & each loaf is heavy & misshapen.

    I've followed Zo's recipes to the letter & hovered over the machine each time. Service would need to be in Toronto, Canada.

    We just bought the same machine and are having the same problems. We have followed the whole wheat recipe to a "t" and also tried one of our tried and true whole wheat recipes. The bread comes out very dense and the crust is hard as a rock. Not sure what's going on...we set the crust to "light" and it still turns out very hard and dry.

    I also have the same problem. Heavy, dense and dry loaves. Not sure how to rectify the problem, other than customizing the settings to knead and rise for a longer time than the standard setting. I hope someone comes up with a solution.

Hi nanearl,

(A personal aside - my personal experience with home-baked bread is that it tends to be a heavier product - - but that may be because the recipe gets experimented with, and whole grain flours tend to be used rather than bakers flour.)

It sounds like something is stopping the yeast from acting (fermentation creates to CO2 bubbles that cause the bread to rise). Was the yeast you used all from the same batch? (sometimes they have bad days at the yeast factory, too). Can you watch when it runs through the cycle, and check for conditions _before_ the dough is supposed to rise? If it heats up much too quickly/soon, the heat can kill the yeast before it get to do it's job.

Recipe books


I have several recipe books for bread machines. You can use just about any book from other models as long as you follow recipes for your size machine. I.E. 1.0 pound loaves, 1.5 pound loaves, 2.0 loaves. Just be sure you choose the right loaf size when you program your machine and that your machine has the capacity to make the size loaf you want.

If you use whole wheat flour without any bread flour (bread flour is marked on the bag) you will have small dense loaves unless you add wheat gluten. The product "vital wheat gluten" is for sale in most grocery stores in the baking aisle. If you don't want to add gluten then you will need to use at least 50% bread flour and 50% whole wheat flour to get a larger loaf. Those are the 2 choices to make large loaves using a lot of whole wheat flour.

I found the zorirushi needs a lot more water than even the recipies in the book call for - especially in dryer climates. Add at least half a cup more liquid and see if that helps.

personnally, i would take back to the store and DEMAND refund or replacement of defective equipment, tell them you do not care whats wrong with it, you bought new you expect to not have to fix anything before you use it. if no action call better biz bereau

Hitachi HB B102 Bread is short and dense


Try 'proofing' your yeast; I've gotten a couple of NON-stale dated envelopes that caused the same problem.
If they are baking through, there isn't likely anything wrong with the bread maker unless the rising temperature is no longer right. During the rest time, feel inside the container to see if the dough is getting enough warmth to rise.

Try to buy bread mixes that are in proportion to your machine. I had a machine that mads 2-1/2 pound loaves. I could only find mixes for 3/4 pound loaves. I had to buy multiple mixes, put them together and divide them by weight. I gave the machine away.

Having difficulty


Try different batch of yeast. If still a problem increase the amount of yeast and/or sugar. Also if it rises and then falls there may be too much liquid.
