How to extend optavian field tripod

This tripod extends to 64" . I have never used a tripod before. To raise it about halfway is intuitive, but I can't guess how to raise it higher. I also can't figure out how to get the plate off to exchange or attach to camera. I am being cautious so as not to screw anything up.
