Bread maker {kenwood}

Wholemeal recipe

I have a new machine and 2 wholemeal disasters first appeared not to risen but was ok in side the other was eatable but very close texture
neither had darkish tops but sides were ok

Do you think it will help to use more yeast say half as much again? I did the recipe on page of the book N0 8 on menu no 3 black and c an I use lard in place of oil

I have used a mixer for ages but not yours with great sucess

Check the date on the yeast. Also, if you use flour with gluten, it helps.

Instead of more yeast, substitute 1 cup of white bread flour in place of the whole wheat flour. Whole wheat flour always makes a more dense loaf. Also, put a tent of aluminum foil over the loaf to radiate the heat back onto the top of the loaf to help brown it (as you would when baking a turkey).

I am using the old recipe from my 20 year old Black and decker book, in my new new B & D bread maker and it falls flat on top? In the old machine it rises beautifully and stays there, why? new bread...


You may find that one machine (the old one) stipulates Active Dry Yeast and the other one (new) stipulates Rapid Rise Bread Machine Yeast. What are the main differences from your old recipe and a similar recipe in your new recipe?

When I first got my breadman I made several loves of the basic white recipe using Pamela's gluten free bread mix. They all turned out fine. Then I started experimenting with the other recipes provided. ...


Without knowing the specific ingredients in your recipe and having no experience with gluten free flour I am basing this on what I know about bread makers in general. I have owned dozens!
1) If the onion spice you are adding is something like a mix (onion soup mix for example) then you may get better results if you cut back on the salt by about 1/2. Also, next time when your machine starts the rapid knead (after the beginning slow knead) if the dough looks like batter instead of a dough ball add about 1 tablespoon slowly trickled in over about 10 seconds. Watch the dough ball and see if it starts to look a little dryer. The goal is to not have the gooey batter on the bottom of the pan. The slow addtions of flour will do that for you. Hi, You can definitely make white bread in your machine. Just google for bread machine recipes and I'm sure you will find something. I actually went to a second hand book store and found a cool recipe book. I use this one more than the recipe book that came with my machine. Hank

Bread wont rise


I have a 20 year old Panasonic that we have used virtually every day for 20 years!  When we first got the machine we had the same problem that you are experiencing.  The trick for us was to use bottled water, we found that the chlorine in tap water killed the yeast.  The other trick that improved our bread was weighing the flour rather than measuring in cups. Until you have lots of experience, do stick precisely to the recipes.  mmmm--fresh bread!

My best results

6 heaped tablespoons whole meal
2 heaped tablespoons strong white
2/3 Teaspoons dark brown sugar
A healthy squeeze of tomato puree (adds ascorbic acid and makes the bead last longer)
Pinch of salt
about 3grams dried yeast

select "dough" (9 on mine)

When the program end bake in an oven at gas mark 5

I have never really been satisfied with a square loaf with the paddle hole in it. Also the bread ends up really heavy. I think this is because the bread sweats rather than bakes

The bread-maker is also easier to clean after just making dough, it produces better dough than i can by hand and the machine gets on with it while i can do something else!

Half sized dish shaped wholemeal bread


Hi
I had a similar problem in making sourdough bread and noted on some websites the importance of correct salt and surgar quantities for rising. I increased my quantities to correct the problem. Of course the recipe was different but it may help.
