I'm printing .pdf, .tiff, .jpg files to the 7750Dn and they are coming out pixalated and glitchy looking in some areas and fine in others.

Go to Xerox.com, download the newest PS driver and in stall that.
If that does not help, there is a software update, that will be on the same page as the driver. It will be called a firmware upgrade, download and follow the instructions with it. You can update that firmware through internet explorer, or foxfire, whatever browser you use. There will be step by step insrtructions there.
But I suspect your driver is most likely the cause of your problem.
But do not use the PCL drivers for those applications.

Put scanned document on my computer to print afterwards if necessary and read on my computer

I am unclear on your problem but in general..you use the scanning software that came with the scanner scan the document and save the scanned file to your computer as a pdf file for documents or tiff or jpg for photos, (you set the type of file you want to save with the software options)
To print afterwards open the pdf with acrobat and print it
Did that answer your question?.

I have a DMC-FZ20 and the tiff pictures are wrong, jpg are fine

It's all to do with SD cards greater than 1GB and the limitations of the camera firmware. For some reason the camera dumps an extra 16KB of junk 16KB into the Tiff which throws everything out.
I have a utility (drop me a line and I'll send it to you) I threw together using some 3rd party tools to fix and affected TIFF files but leave all unaffected ones alone. Just run it in the folder where you store the broken files.

How to scan documents and save them as jpg Format as default instead of tiff?

On some copiers, there is an option to scan as JPG. Press the Scanner function key on the left, and look for a button on the screen that says something like "Scan as file type." Press this button, and if that copier can scan JPG files, you should see the option there. Otherwise you might have to scan as TIFF files and then use a program like Microsoft Office Picture Manager to convert them to JPG images.

When placing DCS2 files into a picture box the preview displays as a pixalated lo-res image. Tiff files are fine. The preferences are set to full resolution previews. Is there a way to make DCS2 files...

Looks like you would be better off just converting to tif files. Quark apparently has a problem with these type of files. You can try saving as Multi Channel. Make sure you set the preferences to Full Resolution Preview.

Documents scanned as 256 grey scale/TIFF show up as black pages.

Grey as you know is different shades of black. Uncompressed TIF can store this information. Compressed TIFF is not designed for this. Compressed TIFF is for blck & white only. Try JPG option. JPG can compress Color & Grey. For pure black & white chose TIFF compression.
