I was recently given a pair of Yamaha 2075c Power Amplifiers that were being updated in an auditorium setting. Would it be a worthwhile endeavor to recycle these "older" technology amps in a rack mounted portable PA system for use by a small band in a smaller environment/setting (50 to 200 vs. 800 to 1200 seating)? If viable what portable speakers/cabinets would you match them up with? Thanks!

What's a crone box? If you have no problem installing the system, without a manual, then you have a problem. The TDA-100 is a dealer only product. Hanging it on the wall and running cables to the Amphenol connectors is the easy part. The 16 port digital card uses the first 16 pairs of the cable that get cross cut to the second pair of an RJ-14 jack....in the USA. The 8 port and 16 port trunk cards use the first 8 and 16 pairs of the cable. The only tricky part is if you have a hybrid 8-port card. It uses the first 2 pairs of every 3-pair set for voice and data.
Your real problem is going to be programming. With a manual, but without the programming software, you're going to be very limited. If the system is already functional, you might have access to some of the programs, but you're going to find it difficult to do anything worthwhile.
I suggest you call a Panasonic engineer to finish the job.
You could use this amp as effectively 2 separate mono amplifiers - using one channel to power the monitors and one to power the main speakers.
Alternatively you can run the amp in stereo connecting one set of speakers to the neutrik outputs and one to the jack outputs. In this case the amp output will be shared equally between the two sets of speakers, which are in parallel, and the combined impedance must be not less than 4 ohms.
Faders that get contamination in them can be a problem.
The external driver chips CAN be damaged when people connect the unit to amplifiers that are run from a power source at opposite ends of an auditorium for example, due to common mode ground loops and faults.
Setting up a system is one part knowing what equipment is needed and one part electrical engineering regarding safe interconnection of low level audio signals.
If the output pairs tests OK, then either the driver circuit is fried or there is a voltage offset that is kicking in the protection circuit. Check the voltages for +/- values on both pairs. They should be equal and opposite. Update this with what you find.
Unless you have experience working on tube amplifiers and all the necessary test equipment you should spend the money and have this done by a qualified electronics technician who has experience particularly servicing tube amplifiers.
