I have been able to do this before with other printers but can't seem to get passed the error message on this epson.
basically i want to reconfigure the print settings so that if i am out of or low on magenta the printer will still function and print with the ink that it does have. the truth of the matter is is that with so many cartridges for this printer, it often stops projects because one ink catridge is out. i was able to, with my other printer (not an epson) was able to shut off the auto warnings so that i could continue to use my printer even with other ink cartridges low.

You can diagnose most problems by checking the control panel LED's for ink out, paper-out or copier problem. If a problem occurs while you're printing, you'll see an error message in the progress window on your computer. It may also be helpful to try running a printer nozzle check.

Are you often to used refilled cartridge? That's possible your waste tank has been fulled. Hold down the 'Stop' AND the 'B&W' button while powering up. This seems to clear the error message and restore the printer. Worked for me--dunno how long it will last tho!
when ever you want to refill ink make sure, that the ink you refill decompressed for about 30min before you fix it into the printer.
Another thing is that you uninstall the software of the printer and reinstall again, and check the power supply of the printer is working perfectly.
