That would depend on the impedance (resistance) of the subs. Your best bet would be to use the full power of the amp to one channel (i.e. bridged) instead of to two separate channels (i.e. stereo). Two 4 ohm subs wired in parallel would present a 2 ohm load to the amp, which should allow you to get all 1600w out of it.

all of them. The reason for doubling up like that is so you don't have to run monster power cables (it's to handle the current needed). The remote goes to something that only gets power while the car is on...it's the remote on/off switch (because you don't want that brute powered up while the car is off) I'd need to know more about your car to help further, and I am not a car expert.
If you are looking for a schematic, I am sorry, but there aren't any. I I have been studying these amps for years, and PPI holds that info very close to chest. It is possible to work on the amps without one though, if you are familiar enough with them. What kind of problem are you having? I have fixed many of them in the past, maybe I can point you in the right direction.
The PCX-1500 is a single channel amp, it can't be bridged. I realize that it has two sets of speaker outputs but electrically it only has one output. The connections are actually paralleled inside. Electrically it only has one output. Physically there are just two sets of terminals to allow more convenient connection of 2 speakers. You can use either one or both. If you use both you need to take into account that they're parallel to each other. Connect 4 ohms to each set the amp sees 2 ohms. Like wise with 2 ohms to each set, the amp sees 1 ohm.
Since it's an intermittant problem and a relatively expensive amplifier, you should have it checked by a qualified tech. If you keep trying to power it up, it will eventually blow out the power supply transistors which will add as much as $100 to the repair bill.
I'm not familiar with this amplifier but in most cases, if a mono amp has more than one positive speaker terminal and more than one negative speaker terminal, the positives are directly connected and the negatives are directly connected. So as long as you connect the speaker positive to a positive speaker terminal of the amp and the speaker negative to a negative speaker terminal of the amp, it will work properly.
