It actually depends on what, how and where you are cooking it, First of all, your proteins (Pork, Beef, Poultry, Lamb, et cetera all cook at a different temperature, to a specified temperature and depending on the mean of cookin, IE; oven, skillet, grill or pressure pot. How does the food know which way its facing?
Try covering the food with a lid from a smaller pan.
And always remember...to cook faster, sometimes you have to cook slower! A carbon layer on food acts as a heat shield against further cooking!
