Hello there, both questions can actually be answered at the same time - at one point, it seems the autoplay menu that normally pops up when you pop a blank disc in has been told to do the "open iTunes" action every time. To change this, go to the Apple Menu -> System Preferences, CDs & DVDs (should be in the upper left corner of the window), and make sure that the "When you insert a blank CD" and "blank DVD" both say "Ask me what to do" next to them - if not, then change it so that they do. Now, it anytime you pop in a blank disc, it will ask you what to do, and you can tell it "open with Finder" when needed, or "open with iTunes" if you want to open it in there.
