Ensure you have enough gas in the tank as the gas gets low this way happen.
ensure gas tank is full switched on.
ensure you keep the control knob in long enough to overide the blow out cut off.
anything else may need specialist attention.

Can you run your heater without a roll out switch?

The roll out switch is a safety switch. It is there for safety. The purpose of the switch is to cut the gas off if there is flame or excessive heat low in the heater as found when the heat cant exscape out the top. Many reasons for a roll out failure if you are tripping the roll out it is always a symptom of a larger problem.
Low gas pressure or lack of combustable air causes soot in the heater like that of a chimney. This will restrict the air flow through the heater. A spider web in the gas oriface or burner can cause a roll out flame to hit the roll out fuse. Indoor applications can easily be an issue with the exaust venting or fresh air supply. Outdoor applications it could be a wind down draft through the heater. Whatever the reason it is tripping the roll out fuse, by bypassing it you are allowing the gas and burn to continue in an unsafe condition which mean larger problems will arise possibly even the heater catching fire.

Started overheating one day when idling, but hit the gas and temp went back down. now overheats within 5 minutes and doesnt go back down. coolant seems to disappear slowly, coolant in radiator is bubbly,...

Sounds like you have a leak somewhere. A good place to check first is the heater core. It is on the passenger side under the dash. Check the floor carpet and under the carpet if it is wet or any signs of antifreeze. If so than your heater core is leaking, and since you don't have heat it is of course broken. This could also the the reason why you have bubbly coolant, with air leaking into the system.

I would start with that.

Good Luck! :)

The heater will not stay lit unless you hold the button in. Thanks, Susan

Try cleaning the thermo coupling, sometimes soot will cover this and it cannot detect a flame, light abrasive sandpaper will work. ( The thermo coupling is what the pilot flame touches
