Please check all sensor arms in the document feeder. The sensor arm in the middle just below the separation pad is called 'paper end sensor'. If this sensor arm is blocked or broken the scanner don't stop the feeder.
Another possibility is a driver error.

How do I stop the scanner from scanning the blank back of the page?

Somewhere in the settings for the scanner it is set to scan both sides. You need to go into the menu and change to one sided scanning. Another possibility is that you could be putting the document to be scanned in backwards.

Fi-5750C Fujitsu scanner can't change grayscale default setting

Photoshop is not an "advanced" scanning program. To get some "production" and value out of this expensive scanner you need a professional scanning program which also may control the settings of the scanner. Use PixEdit which utilizes the built-in jpeg compression in the scanner. Did a test scanning 10 pages A4 duplex fullcolor. Adobe Acrobat Pro used 4 minutes. PixEdit used 20 seconds. Guess Photoshop (in your version) would also scan uncompressed and not use this good scanner optimal.

Fujitsu fi-4120C2 scanner

There are two generally components for a scanner to work, One the Hardware Driver, which connects to the Comp and Two, a program to scan using the hardware connected. Sometimes, both may be available in the same program. For example, after installing the Device Driver, you can use any scanning program, to scan. Hence please check if you have loaded the Device Driver. You may be just using the scanning software, whcih is not able to detect the device!
