This is quite a common error it happens because the scaler chip that deals with all the display is overheating.

On your AV cable that connects to the Xbox 360, there is a switch on the side of it. If you are using yellow, white and red, make sure the AV cable switch is set to TV. If you are using the other set of cables connected to the TV. Switch it to HDTV.
