How do I clean the grates on my new Viking white

How do I clean the grates on my new Viking white enamel cooktop?It's new, and I find the grates have absorbed all the cooking grease and look awful. Also the stainless ring around the burners gets baked on grease almost immediately after cooking even water. How do I maintain this?
