Electronic clock I presume. first of all turn power off then back on. Clock display will now be flashing.
press and hold the two buttons far left and hold in. at the same time press the + or - button to set clock. You should also have a pan icon between the hours and minutes iluminated which means you are in manual mode

All appliances must have a rating plate attached. This gives the load etc. It hsa to be there by law, and on some appliances, is duplicated on the back. Max draw on a double oven would be 3 elements and a fan.
