Williams wall heater, lite pilot and heater comes on okay, but will only come off when I disconnect the thermostat?

If you have to disconnect the thermostat wire at the gas valve then it is either a shorted thermostat or a short in the thermostat wire.

If you only have to disconnect the thermostat from the wire, then it sounds like a bad thermostat, replace the thermostat

My cadet wall heater wont turn off

My cadet heater was doing this so I pulled it off of the wall and saw that the two wires coming from the thermostat portion had melted out of their insulation and were crossed. The heat is of some concern, but for now I just wrapped them in electrical tape to insulate them better against melting

Your thermocouple may be shot.
Have ya try to replace that one?
A simple thermostat now let me show ya a video of a man that has replaced his thermostat. Even though that gas valve is a bit different the thermocouple does the same function and that is hold down the safety magnet. Now watch:

Replace that thermocouple on your heater.

If it touched a grounded metal surface, it is possible, leave the wires hooked up at the furnace, pull the thermostat off of the wall, disconnect the 2 thermostat wires, and then twist them together, the furnace should fire, if it does, then the thermostat is shot. Replace the thermostat, usually when there is a short, it burns out the heat anticipator on the thermostat.

Hi, that thermostat should be a wall mount. This heater has only 2 wires and any "Heat only", "millivolt" thermostat will work. Remove the old T-Stat and mount the new one on the wall, only 2 wires and less than a volt so no shock danger, doesn't even matter which wire goes where. Wall mount thermostat not shutting off

Replace the T-Stat. They go bad after awhile and then you just need to replace the stat. When you replace the stat also check the wires to make sure they are not broken or frail.

If the unit has a wall thermostat, remove one of the wires from the thermostat. If the unit stops it indicates a bad thermostat. If it continues to heat, remove one of the wires coming from the thermostat going to the gas valve inside the heater. If it continues to heat you have a bad gas valve. If the heater shuts off, you have a bad thermostat wire (short).

Wall gas furnace

look inside the control panel of the heater. look for a 120 volt to 24 volt transformer.  There may be a fuse on the transformer secondary.  The thermostat switches a hot 24 volt wire so you won't find a common at the thermostat.
