Question about Zojirushi BBCC-X20 Home Bakery Supreme Bread Maker

Top of load doesn't bake completely

I have a new X20 and have trouble with the top of the loaf baking properly. The sides and the bottom have a good crust, but the top is always thin and pale. Does anyone have any suggestions.

    This was only my first loaf but I followed instructions and measured ingredients meticulously. Followed the Rapid Rise yeast recipe and instructions. The result: It did not brown on top at all, while bottom and sides were so browned it was almost crunchy. The setting used for the crust was medium. The recipe was the Italian Herb Bread in the recipe within the instruction booklet. There was little to no taste to this bread- probably not enough basil or salt. Otherwise, loaf was tall and perfect - moist with good texture without being too doughy.

Put a tent of foil over top of machine It will reflect the heat and brown more.

How can I keep a baked loaf of bread from sticking to the pan ina west bend bread maker?

Let pan and loaf cool for about 10-15 mins then try to slide it out then. Also you can very gently ease a plastic knife around the top of the bread, to see if this helps.

Recently we bake bread and the top 1/3 does'nt bake well and the top of the bread comes off. What could the problem be.

My oven is not baking properly. The tops of banana bread and cinnamon rolls are browned and bottoms still soggy.

It's possible the lower bake element is not working. If the oven takes a long time to come up to temperature, that's a good indication that a baking element (bottom, broil element is on top) is bad.

The bread does not rise properly.The model# is BBCC-x20.All instructions are followed and yet the machine does not bake a consistent,even loaf.

Try a different flour. Make sure it is a Strong bread flour suitable for Bread machines. perhaps your packet of yeast is stale.

How large of a loaf can i make

Here is how you determine your loaf size:


if your Pans capacity is less than 10 cups of water you can only bake a one pound loaf

If your Pan capacity is 10 cups then you can bake a one pound loaf or a 1.5 pound loaf

If your pan capacity is 12 cups to the top of the pan you can bake a 1, 1.5, or 2.0 pound loaf

If you pan capacity is 14 cups or more than you can go as high as a 2.5 pound loaf.

Getting he3 error message

That message is the machine telling you that it is TOO HOT to bake a loaf of bread. It usually comes on when you have baked a loaf of bread and then try to a bake another one before it completely cools off. If you are getting that message with a cold machine then you have a problem that will require repair or replacement. I hope your machine is new or under warranty if you are getting that message with a cold machine.

Zojirushi bread machine

Not sure if this is relevant to your issue, but I just completely disassembled my machine to fix a problem in which one of the paddles stopped turning under load. It would turn with no dough, but slipped uselessly when making bread. Diagnosis: if you can turn the rotor by hand (remove the baking pan and try to turn each one) it's slipping. You should not be able to turn them.

I just fixed this problem. The belts in my machine are fine, in fact so massive I can't imagine them breaking. But access? Yikes.

So, forget the screws on the bottom. They just hold on the feet. Remove all the screws around the top of the baking chamber, the two that hold the control panel on, and the remaining screws under it. There are about 12 screws. Remove the 6 at the bottom of the baking chamber, but not the 2 that hold down the element. Remove the metal sides of the baking chamber (it's one piece). All this is to get access to the screws that really hold the works to the base. They're around the perimeter of the metal chassis on which the motor and element are mounted. Remove them (get help or arrange something to keep the control panel from exerting too much pull on the wires to the element. You could unplug the control unit but I didn't need to.)

Once you lift the motor assembly exposing the belts underneath, you'll see what's loose. Each nut holds down a metal plate beneath the rotor. If it gets loose, the rotor can move more or less freely and won't turn. It looks like they applied an inadequate dab of glue to hold those in place. I should have put in a star washer to keep the nut from loosening again. Next time.

Bread pan does not release loaf after baking.

The Teflon coating on the inside of the pan has worn. You will need a new pan and probably also a paddle. In the meantime you could try spraying the inside of the pan with cooking oil prior to each use.

Trying to better define the problem....

Do you have any cuts, holes or "shorting" or tin-foil/aluminum around your bottom bake heat-element? If so, you may need to replace the baking Heat Element. (Ensure you do not use aluminum foil around your heat element to prevent your oven from getting dirty)

To replace your baking heat element, with power off; remove 2 screws securing the bake element. Slightly tug and pull towards you for about 3 inches or so and disconnect the connecting wires at each end. Then completely remove the heat element and install new in reverse manner. Whats' you're model number?
