How do you change the dosage time on a Cimbali Bistro espresso machine

You can do it one of 2 ways, if the machine has a display then you can go through the program mode by removing the face cover on the display and pressing the programing button then navigating to the dose setting menu, then select a button and change the numbers there. Note the numbers are not ounces rather flowmeter cycles.
Second way is to hold down the stop button for 8-10 secs you will notice the lights flashing and you will hear a faint beeping every second, press the button to program then hit stop when you get thew correct volume, when done with all buttons hit the stop again.

It sounds like one or more of your gaskets has failed it depends where its leaking and steaming from.
I find a parts list is helpful in identifying where the problem might be the best I could find on the net for yours is a austrralian website that has on line parts diagrams apparently a lot of the parts are used in a number of their machines the link is

Hold down the stop button for 8-10 seconds or until you hear the faint beeping sound, press button to program when you get the correct level press stop button. On some models you have to hold the button until you get the correct level then release. When you are done programming press stop button a second time to exit program mode.

La Cimbali Owners Manual Wanted


Operators manual only describes how to install and set up. The Technician's manual is translated from Italian and is purposely vague. (Cimbali wants you to go to tech school). Suggest you ask for a annual preventive maintenance from your local service Cimbali dealer. You may need an overhaul/de-scaling which will be very expensive (+$1,000) in labor and parts. (mostly labor as it takes us about 40-50 hours per machine.) Hopefully you just need to change the worn parts in both groups and a vacuum valve. Good luck!

Cimbali M29 Select


Remove the 3 screws on the side of the bell they might be bolts or allen wrench screws. That will give you easier access to the screen and screw(make sure you have extra screen and screws).
