We do not understand how to project a DVD movie. Do we only hook up the projector or do we hook up the computer and projector?

Depends where the "source" is. If you want to show your pictures and videos that are on your computer. Or play a dvd from your pc, then yes you need to set up the computer

Why does my epson emp 700 projector cut off after ten mins even when the fans are working

These models of projectors form Epson have a standby which the projector enters when it no longer senses video input. The fans will continue to run because they are cooling down the lamp which remains hot for a few minutes after it turns off.
This could be a problem with your computer, or dvd player, or whatever device you are using for your movies. Check to make sure these are working properly. Check to make sure that your dvd player or computer is still outputing video to the projector.
If this does not fix your problem, then the problem could lie with the projector itself. The projector fans may not be properly cooling the lamp, in which case the projector will turn off the lamp to ensure the projector is not damaged. To fix this, you could check if the fan outlets on the projector have become clogged with dust. If they have, definitely clean them out with compressed air.
Hope this helps.

With the vpl cs 7 can two computers be run off the projector at the same time as the projector has two ports.

this manual will tell you if you can or not but with most projectors it will not show both the computers at once but you could have both pluged in and switch between computers,http://www.fixya.com/support/p201884-sony_vpl_cs7_multimedia_projector/manual-16017

Dvd player to projector

Yes please.
You can connect it either thru the RCA Composite output(yellow) of your DVD or thru the S-Video or even thru the component out(YPbPR) connections. In the component out you would require three RCA cables and would give you the best possible picture.

Mitsubishi hc1500 banding

If you're using the VGA port, you'll see the banding because it's not really showing 720p, it's doing scaling (I'm not sure from what resolutions it's scaling). So, even though you're using VGA at 1280x720, the scaling is still going on and it's showing the banding.

You have to use HDMI to get true 720p.

PowerPoint and Projector (InFocus LP640) Incompatability

I am unsure of this from your post, but don't try to hook the projector up to the laptop while either one of them is on. Power both the laptop and the projector off, hook up the projector to the laptop, then power on the projector first then the laptop. If you are already doing this, I apologize for stating the obvious.
