Question about Hobart Ovens

Hobart 6.5 Cu. ft. Convection oven doesn't cook even air flow also blows the batter to one side of the pan when making cakes. I nhave to rotate the pans to get them cooked evenly

Thanks for using FixYa. It seems that the oven temperature calibration needs adjustment. Do not open the oven to measure oven temperature because opening the oven door and element or Burner cycling may give incorrect readings. The oven provides accurate temperatures; however, it may cook faster or slower, so the temperature calibration can be adjusted. It can be changed in Fahrenheit or Celsius. A minus sign means the oven will be cooler by the displayed amount. The absence of a minus sign means the oven will be warmer by the displayed amount.

To Adjust Oven Temperature Calibration please follow these steps:

1. Press and hold BAKE until the oven display shows the current calibration, for example, “0° CAL.”
2. On double oven models only, press UPPER OVEN or LOWER OVEN.
3. Press the TEMP “+” or “-” keypads to increase or to decrease the temperature in 10°F (5°C) amounts. The adjustment can be set between 30°F (15°C) and -30°F (-15°C).
4. Press START.

A lot of ovens have a convection option, and the fan will only work in this position. Otherwise, just rotate your pan halfway through, like we always did.

Why is my chocolate mud cake developing a hard crust whilst not cooking through. The fan oven is 140C. (gas 2 to 3) I am thinking of using the conventional oven.Would the oven shelf still need to be on...


  • Either the oven was not fully preheated before baking so it dried out a bit on the edges.
  • Or The temperature was just up to high and it baked to fast making it crisp on the outside yet not done on the inside.
  • Or there is to much batter in the pan and while the temperature is set proper there is to much batter to throughly cook.

I have an bajaj oven and im trying to bake a cake and everthg i bake it the sides of the cake get baked and the middle portion remains raw..ive tried all the up flame,down flame and also both the up and...


if your oven is gas its is very difficult to make perfect baking of of the uneven heating,if your oven is elecric is with convection that one good compare to gas oven on an electric oven without convection, the advantage of oven the with convection is even heating.

Buy an oven thermometer to check if the temperature you set the oven at is accurate. You may have a faulty thermostat, but if the temp is only off by a little, you can calibrate the temp setting on the oven by as much as + or - 25 degrees. If you have an LCD screen, then most likely you can adjust it right on there. If not, then the backside of the oven knob can be adjusted + or -. by moving a set screw and turning as needed. Your owner's manual will have a more detailed explanation on this procedure. Douglas

Well, your temp seems about right, but you may need to experiment. A good thermometer helps in gauging temp, ovens are notoriously inaccurate. All oven are different, but it is usually recommended to go down 25 (15C) degrees from the recipe if you use convection. The type of pan you use has an effect. Glass needs to be 25 degrees less, and nonstick/dark pans brown faster than the insulated type. Make sure that you fully preheat as well, or the bottom may burn. Other than that, convection cook times are less if the bake time exceeds 15 or 20 minutes. Thanks for your question, sorry I can't give a more precise recommendation.

Uneven rising & baking in convection oven


I repair commercial cooking equipment for a living. When a customer complains about uneven cooking the #1 thing that these manufacturers ask is..... are they turning (180*) the baking sheets half way thru the cook cycle. #2 are they staggering the pans front to back & side to side. It's kind of a pain but, works for the commercial ones.

Amana Convection oven not controlling temp


I have just checked the baking guide in the manual and have found that it may not be us after all. (Maybe this is why they telll us to read the whole manual. Well, I never have) According to the cooking time for Baking, the range is very extensive. For example, an angel cake at 350 could take from 28-50 minutes, buscuits at 375-400 could take 8-16 minutes, layer cakes at 350-375 could take 25-40 minutes, pound cakes at 325-350 could take 45-70 minutes and fresh pies at 400-450 could take 35-60 minutes. Basically, the baking directions on the box means absolutely nothing to use Amana oven owners. We have no choice but to cook our food or baked goods until they are cooked, whenever that may be. :) Linda
