My new Alamo 420 lb/day Commercial Ice Cube Maker Machine w/Ice Bin continues to switch to ice bin full mode after dropping some ice.

oops, operates an electrical switch to stop the cycle. the other method is that the accumulating ice contacts a thermostat bulb and the lower temp created by this contact with ice stops the cycle. When ice is removed the t/stat warms up and restarts the cycle. Hope this is of use to you.

Why is the ice from under counter ice machines so much better than refrigerator ice?

Refrigerator ice forms in a mold (think ice tray) made up of not only water, but whatever impurities it may contain. Even safe, municipal water supplies have some sediments and a range of chemicals from treatment. Ice machines create ice from water moving across a freezing surface and the result consists almost totally of water without impurities. So it is much more clear than ice from a mold in the refrigerator. Both systems work well, but the results have marked differences.

What has caused my water inlet pipe feeding the ice making machine to freeze?

It seems there is some blockage in copper tubes ( capillary)
Need to flush internally and then refill refrigerant

If the water is dripping in after it fills, then the water inlet valve is faulty and needs to be replaced.

have you cleaned the machine lately? the float may be dirty and getting stuck and not shutting down the water as it should.

If you are wiring a Taylor machine to three phase power and you have a "wild leg" or "high leg" you must place the high voltage leg on L3. This will keep the higher voltage out of the control circuits of the machine. To clarify what a high leg is, it is created in three phase applications where a certain type of transformer is used. It creates two normal power legs, 110-120 and one leg that is only useful with another leg of power. If measured to nuetral or ground a wild leg will measure considerebly higher than the other legs.
