Question about Apple Audio Players & Recorders
I had exactly the same problem, tried everything, "Authorize Computer", Restore, etc...
Finally I restored my ipod back to original factory settings, then next time I plugged in it again gave me option to start with new Ipod or sync from another. I chose "New" (again) but this time did not sync any apps from other ipod, (only music, etc..).
Then disconnected, and reconnected again, and this time only sync'd a couple of apps, (Skype & WifiTrak) . Then disconnected, and these new apps started working!
I think the problem has something to do with the way Apple upgrades the firmware, because when I first got it home and plugged it in, it wanted to sync all data / apps right away, before upgrading....
Please leave me comment, if you need furthur assistance

Try updating the firmware to the latest maybe it could be fixed by doing that.
Delete them from your ipod by holding your finger on an app and pressing the X on the top left hand corner of the app. Then connect the ipod to the computer. This should write the app(s) from the computer back over to your ipod.
Also, the syncing is simply plugging your ipod into your PC/Mac, it's what I do daily to charge it or to put new songs/movies on it. I think you're thinking of restoring it. In that case, you lose your apps and music but you can just re-download them and if you had paid for any you can re-download them for free.
I hope help you.
