Too little crema. I use Lavazza supercrema beans on number 4 grind. Is there any adjustment that I can make to pump up the pressure?

My Saeco Xsmall stops before brewing the coffee


1- The grind fineness setting is too fine. Pump is not able to pump through the compacted coffee grounds.

2- The machine is not descaled. The Calcium deposits in the hydraulic system have reduced the pump pressure. The partially clogged water passages can generate a back pressure to reduce pumping pressure. Was the machine descaled in the past two or three moths? If yes, what was the descaling product used?
3- The pump may be air locked and not able to pump water.
4- Oily beans may have been used. Oily beans are poison for the all fully automatic espresso machines. This clogs the grinding chamber or the grinder outlet. This model is made in Romania made in 2006 or after. This machine has a Ceramic Burr grinder 2006 which is a huge problem to clean adjust beans quantity per shot of espresso etc. etc. Occasionally it will dump dry coffee grounds when the quantity of beans powder is insufficient.

I have turned the grind knob all the way down, below 1.


Sounds like there is not enough coffee to make a solid puck. If you get crema, grind coarseness sounds ok. A finer grind will produce less coffee grounds for the puck and increases chance of clogging.
You may have to balance grind size with amount of crema to get solid puck.
Big problem with these is you want dark roast for espresso, but oil on beans clogs grinder. Are you using a dark roast? A medium roast works better in these. Or, can you increase the grind time? My Super-auto had a program option to increase time. But not in reg instructions. Got it from authorized repair facility.

Dispenses very little CREMA. Is there something to adjust?


Rule of thumb - espresso machines deliver a shot of coffee in 25 to 35 seconds.

If there is no crema and the coffee comes faster:
  1. There is not enough coffee in the portafilter (7 grams per shot).
  2. The coffee is not tamped enough (about 30 lb pressure on the tanmper handle).
  3. The grind is too coarse.
If the above does not "fix" the crema problem, post again and include make and model of the machine and type of portafilter.

The crema is created by reducing the grinding to more fine so the coffee will run slower around 20 sec. Inside the coffee bean container their is un adjust control and with special tool you can turn it to grind the coffee to more fine.

I bought a portafilter without the pressurizing ring, now I can't get a crema, what's the problem

Crema is created by pressurizing the grounds. The basket with the ring can create the pressure in the basket. If you don't have a pressurized basket, you have to make the grounds fine enough when compacted in the basket, to create the pressure. This is an art that can be mastered, but you need a real good grinder, and fresh coffee beans. Old beans won't give good crema.

to get starting point you adjust burrs to touch each other. when they touch each other you have finest grinding, after you hear metal voice you turn back 3 dots and grind only for 1 dose. you check it, if it goes to slow, you go one more back and clean gruinder, THAN you grind 1 dose more. 2 or 3 times and you will get perfect grinding.

Hey Nashville,

I have a few suggestions/questions for you. I've had the Innova(Ascaso) Dream for several years now and use it at least twice daily. I would trust your own senses before sweating the gauges too much. If you're really worried about it being a temperature problem, my first question is whether or not the espresso is actually hot when it comes out.

But my best guess is honestly your beans and grinder (or lack thereof). The problem with using pre-ground beans is that even on the day you open the can, they won't be nearly as fresh as truly fresh ground beans you grind yourself. And the problem gets dramatically worse every day after they are opened.

The key to a thick, crema-laden espresso is very fresh beans that you grind right before making your espresso. You can certainly confirm that the machine is working with any old coffee grinder and a bag of *really* fresh beans from a local roaster.

You really need all the oils that come with really fresh-roasted and fresh-ground beans. And the beans really need to be ground very fine for espresso.

I keep a can of pre-ground Illy decaf beans around for the rare occasions I need to make a decaf, and it's like night a day between that and what I drink daily.

If you try the fresh beans and grind them yourself and can see the obvious difference, then you may want to invest in a good-quality burr grinder (as opposed to the spinning blade kind that most folks use for drip coffee). The reason is that with a burr grinder you can get consistently-sized particles every time. So once you get the setting right on your grinder you can keep pumping out the shots time after time. With a rotary blade grinder you get some big pieces, some little pieces and the water flows through too easily -- or you grind it longer and (1) burn the beans from the heat, and (2) end up with some particles that are just too small -- essentially dust, that will actually clog the process.

So, my best suggestion would be to find a local cafe/roaster and buy a half a pound of beans from them and grind yourself. If you don't have a grinder or want to eliminate a variable, ask them to grind it for you for an espresso machine.

Again, if you can see the difference (and I think you will), then you can consider getting yourself a good grinder.

No cream on the espresso when dispensed


I was having this trouble with Lavazza beans and Morrisons (horrible) beans. I switched to Formula 6 from James' Gourmet Coffee on the internet and every cup has a great crema layer and good taste.
With the old beans I could get an occasional good cup, it seemed this was more of a problem if the machine had been switched on for a long time before making the cup. I use a Gaggia machine with a Gaggia MDF grinder on 8 or 9 setting, with the new beans I now get a great cup all the time so I'm going to try more the James' range!

Evolution 2 step poor crema, shots too big


What bean type are you using? Do you have you own bean grinder? You should try diffrent settings on your grider. I think you should use a more fine grinding setting. It should take around 25sec for the espresso to flow.
