This varies depending on your model of bike. Typically, the temperature sensor (technically, a thermostatic switch) that controls the fan is located somewhere on the radiator of the bike (Honda VFR, for example), or near the water pump (Aprilia Mille).
Make sure you understand the fan circuit before trying to wire in a manual switch -- some thermo switches turn on the fan by shorting the circuit to ground, while others complete a circuit supplying positive voltage to the fan.
Run the switch off the battery just make sure you shut it off whenn you are done riding

If you're wiring in a MANUAL switch you don't use a SENSOR. You connect the switch between the fan and the battery. You only use a sensor if the fan needs to come on automatically.
