It could be over exposure or maybe it is set to indoor or night settings.. Try setting it to automatic or to "outdoor" when you go outside and then take a picture.
this can be usually associated with your white balance in still camera mode.
Check to see your white balance is set correctly or just set it to auto. Also make sure the mode you are in it set. (ie. indoor, outdoor, auto, speed)

There are different settings. You can view the past photos because you are using the viewer for that, but you have a setting off in the menu. You need to turn on view photo or preview photo after picture taken.
I am not sure what it is in the Canon line, but look in your manual for the setting.

If the image has not been "Protected" to prevent erasure it sounds like it has become corrupted on the card. Suggest you save all images you wish to keep to your computer then Format the card (Erases ALL images) in your Camera. Hope this solves the problem.
