When we turn on our FinePix A800 in camera mode it just displays a
white screen. When you turn to video mode it just displays a
black screen. This is kind of baffling to us because it worked
perfectly well for a couple of months.

Same as you. Screen for my camera does not work. And I bought it just 10 months ago!

Same thing happened to me. All I saw was a white screen. So I took apart the back to have a look. I used http://www.lifepixel.com/ir-tutorials/fujifilm-s3-pro-digital-infrared-conversion-instructions.htm as a ref. I took the LCD screen out and put it back. The cable was not connected properly. Now It Works Great.

Hope this helps

No solution for your first problem but it's normal that you cannot view your photo on the LCD screen before actually taking it. Due to the way a reflex camera is built, you can't have a live view on your LCD. The Fuji S3 Pro has this type of preview as also most recent camera (Nikon D300, Canon 40D...).

My lcd screen will not show the picture. The

First try pressing the DISP or DISPLAY button to make sure that you didn't accidentally turn off the LCD. But if that's not the case...
Try taking and downloading a picture taken while the screen is blank. Is the picture also blank? If so, a stuck shutter is another common failure mode for digital cameras. The symptoms of a stuck or "sticky" shutter are very similar to CCD image sensor failure. The camera may take black pictures (for shutter stuck closed), or the pictures may be very bright and overexposed, especially when taken outdoors (for shutter stuck open). To confirm a stuck shutter, put the camera in any mode other than "Auto", and turn the flash OFF (you don't want to blind yourself for the next step). Next look down the lens and take a picture. You should see a tiny flicker in the center of the lens as the shutter opens and closes. If no movement is seen, then you likely have a stuck shutter. If so, please see this link for further info and a simple fix that may help. Read the users comments there also for more tips.

Note that your camera will not be able to take 15 second exposures, as per the above "fix". Instead, place the camera in manual mode, turn off the flash, and take the exposures in a darkened room. This should give you a couple seconds, just enough time to open the battery door while the red and yellow lights are flashing.
