After going 45 mph or over on the interstate my 2005 ford escape will stall when i come to a stop it will idle in neutral and park but will stall when i put it in gear. Also i notice it stalls when it falls under 1,000 rpms

It could be something as simple as a vacuum line,but sounds fuel related. Possible pump.get a fuel pressure reading done and if pressure doesn't hold.....suspect fuel pump
EGR (exhaust gas recirculation),or TPS (throttle position sensor) When the vehicle makes a stop and go into idle. The RPM is basically too low to maintain the RPM, If the vehicle runs 800 RPM in park or neutral and doesnt stall the setting is correct. If it stall in neutral or park and has a hard time accelerating you will need a TPS, The EGR can stall a engine if it stays open underload approching a stop where it doesnt close properly
I would check your "idle speed control" ISC on the intake manifold. It may just have to be cleaned. An ordinary can of carb cleaner should do the trick if the pintle valve inside is grunged up.
i think this is it.
there is black carbon build up around the throttle plate at idle position.
when the carbon builds up there it prevents the engine from idling correctly.
use a carb spray cleaner to remove it.
and use a very clean rag to wipe in there also.
near the throttle body there is an adjusting screw(flat head) for air fuel mixture, it's on a deep cavity sometimes with a cover, adjust counterclockwise will increase the idle.
sounds like the torque converter lock up might not be disengaging. You might also want to check for engine vacuum leaks. Does engine idle smoothly when in park or nuetral ? if the idle is good I would suspect torque converter problem.
