I have called Frigidaire and numerous suppliers and nobody can tell me what this is. One thing to note, now that that is broken, my oven temp skyrockets in minutes and burns everything to charcoal. The copper wire comes out the back and up into the top of the stove where the buttons and display is. Help? What is this part? it looks like an easy fix if I could only find it.
You claim it isn't a temperature sensor, perhaps because there is a working temperature display? I don't know because I am not familiar with your appliance.
From your description I expect it is the thermostat thermocouple that is broken and the bare copper wire is actually a capillary tube. Normally a sealed assembly with the thermostat, when broken the thermostat doesn't shut down the oven.

Thanks for answering and shining a bit of a light on this.
Upon further inspection it would appear that you are right.
Thing is, that part doesn't appear on any of the schematics for my oven, which is baffling me.
My oven has knob and electronic controls for oven but the knob seems almost aftermarket.
Regardless, I need to replace it or the oven and I can't find this part on any part list for my oven.
I am clearly over my head but this looks like an easy part swap, if I can find said part.
I am wondering if this thermostat only controls the functions for the knob?
Chances are the oven thermostat was bought in by the oven manufacturer from a range of standard types. Similar to a fridge thermostat in form and function the typical oven thermostat consists of a bulb containing fluid permanently joined or part of a length of capillary tubing which is in turn permanently joined to the temperature control.
The temperature increase in the oven turns the fluid to a vapour and a pressure builds and causes a bellows at the other end of the tube to push against a spring until the movement is sufficient to operate the electrical contacts. Adjusting the temperature varies the spring pressure.
I suggest you search for thermostat. That the thermocouple is part of the assembly is taken for granted and often not even illustrated.

I believe the oven it has a power surge protector within the appliance. Try to unplug it and plug it back in. It should solve the problem.

All your oven features are controlled by the Electronic Range Control (ERC) board. This is your clock/timer assembly. Unfortunately, most do not have fuses and are not serviceable. You will probably need to replace the board. The following link explains how:

Even though the ignitor glows it does not mean that it is working...sounds crazy but it is true... the ignitor needs to pull a certain amperage to let the gas valve open and as they get older they stop pulling enough current...

Thank you for question. I understand your concern with your Frigidaire range. Without knowing the model number I can't be 100 percent certain but F30 generally implies an open oven temperature sensor probe. The oven temperature sensor probe is located inside the oven cavity in the rear upper left or rear upper right hand corner. It can generally be removed and disconnected from inside the oven cavity.
Check the wiring harness connections between the control board and the oven temperature sensor probe connector. Check the resistance or the sensor at room temperature with an Ohm meter, if less than 996 ohms, replace probe. Check with meter, for shorted probe harness between control & probe connector.
. I recommend calling a service technician to diagnose and repair your range.
